it’s not often that i crave any kind of asian food. i like it, i just have to be in the mood for it. and for some reason soba noodles with spicy and tangy sauce was sounding real good not to long ago! it is kind of a mix of recipes i have come across.
this recipe is for one or two
what you need:
one scallion chopped
one carrot sliced
1 tsp of minced ginger (fresh or jarred)
1 tsp garlic (fresh or jarred)
1/4 of cucumber diced or sliced or shaved
2 tbsp of cilantro
1 tsp rice wine vinegar
1 tsp red curry paste
1 tsp sriracha
1 tbsp seasame oil
juice and zest of one lime
1 tsp soy sauce
boil some water and add your soba noodles following instructions on the package. (for the measurements on this recipe, i only used half the package of soba noodles. you can double the portions of the sauce and noodles for more people… or to the taste of your liking as these measurements or ingredients are subjective!)
sauté the carrots, green onion in a bit of the sesame oil. add the garlic and ginger for a minute. then the soy sauce and red curry paste.
remove from the heat and throw into a bowl. add the rest of the ingredients. cucumber, cilantro, rice wine vinegar, sriracha, lime juice and zest!
toss in with the cooked soba noodles!
can be eaten hot or cold!
(to make gluten free find gluten free soba noodles and soy sauce!)
